I took a huge nap on Sunday, and got up refreshed to cook dinner.
The chicken is simply split in half, seasoned with salt and pepper, and slow roasted at 300 degrees, followed by low broil. The rice is Cajun dirty rice, which I posted some time ago.
The veggies are a dish I found in Fine Cooking called Briam, which is potato, onion, bell pepper, zucchini, and tomato layered with salt, pepper, oregano. This is roasted at 400 degrees 1/2 hour covered, 1/2 uncovered.
Good stuff. Food for the week as well.
