Hey…Smell this will’ya?

Dinner last night.

Probably still good, huh?

FWIW, it was nearly frozen when I bought it. I stuffed it in my deep freeze and there it sat, since probably June last year. It was fine. Smelled fine. Better than some I’ve bought fresh.

I made tacos with it. That bowl at the top has mushroom juice. When I buy a pack of mushrooms, they’ll go bad before I use them all. So what I do is cook what I need, then throw the rest in my dehydrator. They dry out and become nearly immortal. When I go to use them, I soak them in boiling water (in a bowl).

For tacos, I brown the meat with the veggies like mushrooms, onion, and peppers. When all the water from the meat cooks off, I season it then use the mushroom water to mix the seasonings in and hydrate the mix. It adds an really rich taste to the meat.

That one pound was dinner that night (three sell stuffed tacos) and will be dinner two more nights in the next two weeks.

I’ll dehydrate onions and bell peppers as well. I cut them into thin strips, dry them out. They chop them fine, into the size of pepper flakes and use them as seasonings. Put them in a meatloaf and they’ll soften up during cooking. The flavors are more intense when you do this.
